Easy vegan pesto

So you’ve bought a basil plant and you’d like to make your own pesto. But how do you make your own pesto? Well, not to worry – today I’m sharing with you my easy vegan pesto recipe.

For this vegan pesto recipe you’ll only need five ingredients, of which you might already have some hiding in your cupboard. The best thing is that you can vary in nuts: sometimes I use walnuts or pine nuts, or even almonds! But this time I used raw cashew nuts. Cashew nuts give pesto a bit more of a creamy taste. If you’re worried your food processor might not be able to handle nuts, make sure to well the nuts in some hot water for about 30 minutes. This will make the job easier.

Vegan pesto

  • Handful of (cashew)nuts
  • 2 tbsp nutritional yeast

  1. Mince the garlic, or use a garlic press.
  2. Put all the ingredients in a food processor and blitz until smooth.
  3. If the pesto still seems a bit dry, try adding some extra oil.
  4. Enjoy your home made vegan pesto on a slice of bread, or with pasta!
