I did, however, make some changes for my pretzel-shaped pretzels, but the ingredients are all the same.

For the pretzels
- 585 g flour
- 10 g salt
- 360 ml warm water
- 12 g sugar
- 10 g instant yeast
- Coarse salt
- 60 g melted plant based butter
For the coating:
- 25 g baking soda
- 0,5 l boiling water
The first step is to mix 360 ml of warm water with the yeast and sugar and stir through. Leave the mixture for about 5 to 10 minutes, until the yeast starts to foam – meaning your yeast is active and ready for baking!
Mix the dry ingredients together in a bowl and gradually add the melted plant based butter and yeast mixture. Mix or knead everything together until all starts to come together. If you’re kneading by hand, keep going on for another 10 – 15 minutes. Otherwise use the stand mixer on low to medium speed until the dough ball looks smooth.
After this, cover the bowl with a moist towel and let your dough rise at a warm place for 45 – 60 minutes, or until the dough has doubled in size.
Now divide the dough into 8 equal parts. Shape the dough into pretzels – there’s lots of ways doing this, but I used this guide to knot them the classic way.
Lay your pretzels on a baking tray with baking paper – make sure to coat the baking paper with some oil, otherwise the pretzels will stick to the paper (I found this out the hard way!). Now mix 0,5 liter of boiling water with 25 grams of baking soda. With a baking brush, coat your pretzels with the liquid. This is what gives your pretzels that dark brown, crunchy crust! Sprinkle your pretzels with some coarse salt while still wet and cook the buns for approximately 15 – 20 minutes, until they have a nice deep brown color. Enjoy!
