A couple of weeks ago, I stumbled across a recipe for vegan lion bars from wateetjedanwel.nl. My blogger name being kitchenoflion and all, I thought it would be amazing to make these lions. I’ve never been a great fan of lion bars – too sticky, too sweet – but I just needed to give these a try.
So this morning, I went for a brisk walk to Summertown where there are four supermarkets in one street: Tesco, Sainsbury’s, M&S, and Co-op food. I even went to Holland&Barrett to stock up on my chia seeds (buy one get one for a penny!) and I got rice puffs and dates there as well.
The only thing I needed now was koffiewafels. It’s like waffles, but not the soft ones you toast, but small hard ones. Usually they have a flavor, like vanilla, coffee, or even cheese. You know what I mean, right?
Anyway, I couldn’t find them anywhere. It was like the whole universe had plotted against me and decided to fight against me and my quest for koffiewafels (I do tend to be a little bit dramatic, of course this is not the end of the world, I know). Fortunately, I have a brilliant boyfriend who came with the brilliant idea to eat the paste I already made on rice crackers. Take that, universe!
So I’ve learned my lesson: if life doesn’t give you koffiewafels, make a delicious spread instead.
Vegan Caramel Spread

Ingredients
- 1/4 cup (60 ml) coconut oil
- 1/4 cup (60 ml) maple syrup
- 3 tbsp almond butter
- 8 dates, soaked in hot water
Directions
- Heat the coconut oil in a sauce pan, add the maple syrup and almond butter and stir well.
- Meanwhile, use a food processor to blitz the dates and keep a spoonful of the water you soaked them in.
- Add the dates to the mixture and stir well.
- Leave to cool before spreading it on bread, rice crackers, or just eating it as it is!
